12 Ways to Eat More Veggies

Healthy ways to eat more veggies by sneaking them into your meals

Most of us dread eating vegetables. Their bitter flavor and crunchy texture can make it hard to swallow. So, how can we adjust to adding more of them into our diets?  Well, we need to find sneaky ways to eat more veggies by adding them to the foods we already love! Here’s how:

1. Add leafy greens, chlorella or spirulina to your smoothies.

2. Place a smaller portion of your plated dishes on a bed of greens.

 

3. Create meatless sandwiches with loads of veggies and use hummus or avocado spread for extra flavor.

4. Or, forget the bread and make lettuce wraps instead!

5. Make fresh juices with leafy greens and root vegetables.

6. Perhaps a vegetable stir fry for dinner

7. Make homemade vegetable broths with your food processor (Cream of Broccoli, Carrots + Celery broth)

 

8. Split your entree in half and add a side of veggies to your restaurant orders

9.  Try carrot sticks, jicama, or sweet potatos baked in oil-free vegetable broth; Season with cajun or himalayan salt.

10.  Instead of pita chips, dip raw carrots, cucumbers, and grape tomatos into hummus.

 

11. Top your pizzas with with sun dried tomatos, olives, bell peppers, or pepperocinis.

    A 3-Step Recipe

    It doesn’t get much easier than this, folks. Trader Joe’s sells a vegan pumpkin muffin mix, so all you have to add is water, oil, and … eggs? Actually, you can use a plant-based egg substitute to keep it vegan & delicious! Alternatively, you can find a gluten-free muffin mix and add 1 tsp pumpkin pie spice to give it pumpkin flavor :)

    Here’s the 3-step instructions to make Vegan Pumpkin Muffins:
    1. Preheat oven to 400F and use cupcake liners in a mini cupcake tin.
    2. Add 1 tsp pumpkin pie spice to the dry mix if you have a plain muffin mix. Mix the muffin mix flour with 1 cup water, 1/2 cup coconut oil, and 2 servings of Ener-G Egg Replacer. Then, Spread batter into the tin.
    3. Bake in the oven for 18-20 minutes. Cool and serve :)
    You won’t be disappointed. These are the best vegan pumpkin muffins you could possibly have.

      The Meanest Greenest Juice You Can Drink on St Patty’s Day

      Many will wake up and have a green beer, green eggs, or another unhealthy green food to celebrate St. Patrick’s Day.  For the past few years I have realized my passion for fitness & health is more valuable to me than traditions.  Basically, I have stepped back from the stereotypical junk food celebrations and stepped forward to learn healthy and nutritious plant-based recipes for a new way to celebrate the holidays.  It is actually quite fun to experiment with new recipes and make feel-good foods also taste good! Today, I am going to share my meanest greenest juice and most nutritious green juice recipe for you to try.  It’s easy peasy and takes very little effort to make.

      Step 1: Make sure you have a juice extractor!

      Step 2: Grab 3 leaves of organic Swiss Chard  + 1 cucumber.

      Step 3: Slice the cucumber in half so that it fits nicely into the juicer :) You can fit the swiss chard in the juicer without slicing it at all, but you may want to break the leaves into smaller pieces first.

      Step 4: Place the swiss chard leaf in the juicer, with the red stem first. Then, juice the cucumber. If you are not a fan of cucumbers, try juicing a green apple instead! There’s nothing like the fresh taste of green apple juice ;)

      Step 5: If this doesn’t look beautiful and green, I don’t know what does!  Now squeeze 1/2 a lemon right into the foam atop the juice for a tart added flavor. (Skip the lemon if you are making apple juice).

      Here’s to one of the best green juice recipes for your health – I love it because it’s jam packed with nutrients and totally beats eating a cucumber chard salad!
